I’ve been experimenting with flourless peanut butter cookie recipes for awhile. There are so many variations of this tasty cookie floating around the blogosphere at the moment, it’s tough to decide which recipe to try first. With so many variations, you can try all sorts of combinations and come up with a version that suits your own needs, whatever those may be. Here is base recipe that I found via the Bakingsheet blog, which now is actually Baking Bites. It’s a good basic peanut butter cookie recipe (sans flour). You probably have all the ingredients in your kitchen already AND it’s a quick one to throw together at the last minute. In keeping with my recent healthy snack overhaul, I substituted 1 tbsp of flax meal plus 3 tbsp of water for the 1 egg. I also added 3/4 cup of chopped dark chocolate to the batter at the very end. Sorry folks, I gotta get my chocolate fix, no matter what!! The result? These are good snacking. A great alternative to the traditional peanut butter cookie for those allergic or sensitive to gluten and dairy-free for those that are vegan. So, with or without a glass of milk these are a perfect treat.
Peanut Butter-Flax Chocolate Chip Cookies
Adapted from Bakingsheet
1 cup smooth peanut butter
3/4 cup brown sugar
1 tbsp flax meal + 3 tbsp water
1/2 tsp vanilla extract (optional)
1/2 tsp baking soda
1/4 tsp salt
3/4 cup chopped dark chocolate
Preheat oven to 350F. Line a baking sheet with parchment paper.
First, whisk the 1 tbsp of flax and 3 tbsp of water in a small bowl and set aside for about 2-3 minutes until mixture becomes sort of frothy like a whisked egg.
In a large bowl, beat together all ingredients until smooth, adding chocolate chips at the end of mixing.
Drop by tablespoonfuls onto prepared baking sheet and flatten slightly with a moistened finger.
Bake for about 10-12 minutes at 350 F, until golden brown at the edges.
Cool on pan about 1 minute before removing to wire rack to cool completely.
Makes 2 dozen.
Note: The flax meal yields a bit of a more delicate and slightly crumbly cookie. It really helps to let the cookies set on the pan to firm up a bit before placing on a wire rack to cool.

To make it less sweet and less crumbly, I actually just modified it by adding 2 extra ingredients ( 1 cup of almond flour, 1 egg)
and it tastes great!!

This recipe makes an absolutely phenomenal cookie! I can’t wait to feed it to my vegan and gluten-allergic friends! :^) Good thing there’s no such ailment as a sugar allergy (that I know of!).

I looove cookies! I don’t like PB & chocolate together but I do like the idea of adding flaxseed to cookies, making them a little bit guiltless!

My mom sent me peanut butter from home recently (its hard to get any of it worth eating here in the UK). She sent me a selection – smooth and creamy and a huge packet of ground flax seeds! (I’m guessing that’s flax meal?) Anyway I’m going to try this recipe out in a few days. You are so right about chocolate – perfect addition to peanut butter.
On another note – I know you love A16 (though I hear Nate Appleman has flown the coup). Anyway my friend and former co-worker is the chef at flour+water and some of my other friends in SF profess that it is better than A16 so if you haven’t been I think you should check it out. Oh, crap – I just realized you moved to LA. Well when you get up north for a visit.

No flour?
Any cookie with peanut butter is something we want to eat. Having never worked with flax meal, we’re clueless how it bakes, but they look delish. Especially with the milk!
