Lazy Sunday Lavender Citrus Cookies

Ah, the loveliness of lavender.

It’s not an herb that I use frequently but I’ve been wanting to make cookies with some dried lavender I had leftover from an oven baked potatoe dish I made the other day. I decided to add in a bit of orange and lemon zest to brighten it up a bit. The citrus flavored icing on top is really not necessary since the cookies have a lovely floral and zesty bite to them without the additional sugar. But, if your in the mood for a little extra sweetness the icing does the trick. These are perfect lazy Sunday cookies. So go on, curl up with a cup of tea, a good book and a couple of these and have yourself a nice mellow lazy Sunday afternoon.

Lavender Cookies

Adapted from The Cookie and Biscuit Bible – Catherine Atkinson

Cookies

1/2 cup unsalted butter at room temperature

1/4 cup superfine sugar

1/ 1/2 cups all purpose flour

1 tbsp dried lavender

Icing

1 1/2 cups powdered sugar

3 tbsp lemon juice ( or a combination of orange and lemon)

zest of 1 lemon and an orange

Preheat oven to 300 degrees.

In a medium bowl, stir the flour and lavender together. Set aside.

With an electric mixer, cream the butter and sugar together until fluffy and light in color. Add the flour and lavender and mix until batter is incorporated. Mixture will be very dry at this point. Form the batter into a soft ball shape and leave in bowl. Cover with plastic wrap and chill for about 15 minutes. Press dough into prepared square pan. Once dough is pressed into pan, cut even squares with a pastry scraper and poke holes in each with the tines of a fork.

Bake for 45- 55 or until sides of shortbread turn golden. Let cool in pan 10 minutes and remove cookies carefully setting them on a wire rack to cool coompletely. When cookies are completely cool, combine the powdered sugar, citrus juice and zest in a small bowl and mix until well incorporated. Drizzle the icing on the cookies with a spoon. Let dry for 2 hours.

I’ve never made anything with lavender, but I think I’ll have to try out these if I can find some! Citrus and lavender sound terrific! And I love the lemon glaze…

Less than two weeks till I turn in my dissertation and I’ve already ordered a bunch of fiction from amazon. Can’t wait to curl up on the couch with a good book and these cookies without dissertation thoughts looming about! Love how simple the recipe is.

I’m a new convert to lavender in baking. I just had some incredible lavender shortbread from a restaurant. They were so buttery and floral, and had a sprinkling of sea salt on top. Divine!

I have never used lavender in cooking, although it is definitely on my “to do ” list. I think the citrus flavours will complement it nicely and that icing on top looks too good to pass!

These look heavenly! I usually roll out my shortbread. I never actually thought of pressing it in a pan and cutting it. I’m going to have to try these.

Beautiful cookies, fabulous flavours & just the kind of lazy Sunday I would crave. There is a certain laid back luxury to your post Lisa. No rush of any sort. Like time has elegantly stood still. I am heartbroken that my lavender plant has died. We don’t get seeds here…but I love the 2 sprigs I gathered from the plant while it was alive. At least I can take in the wafts & dream of these cookies! ♥
