Chocolate is seasonless and fits in just about anywhere and at anytime. Combined with fruits and spices for a cake or tart, or just simply biting into a piece for the sheer pleasure of curbing a craving, chocolate in any form, has a way of making things happier, brighter, and just better.
These custards came together as I was looking for ingredients to make something with chocolate. I was low on almost all baking necessities, except for the coconut milk I had leftover from making red curry chicken the other night. So, with the coconut milk, semisweet chocolate, eggs, and vanilla, I was able to come up with these tasty custards. Since there is no sugar in addition to the chocolate and the small amount in the coconut milk, these custards are very smooth and pleasantly sweet.
- Baked Chocolate Coconut Milk Custard
Preheat oven to 350
1 1/4 cups coconut milk
3/4 -1 cup of semi sweet chocolate chopped
2 eggs, room temperature
1 tsp vanilla (or alternately the beans scraped from 1/2 of a vanilla pod (discard pod), if you have it)
1/4 tsp kosher salt
Directions:
Heat the chocolate with the coconut milk in the top portion of a double boiler just until melted and smooth. Whisk mixture, careful not to let it burn. Remove from heat and cool. Once cool, add chocolate to a food processor along with the eggs, salt, and vanilla extract. (If you are using the vanilla pod, add it to the chocolate milk mixture instead). Pulse until blended and frothy.
Divide mixture between 6 small ramekins or 4 larger ones. Place ramekins in a large rectangular baking dish, transfer to middle oven rack, and fill just about halfway with water.
Bake for about 30-35 minutes or until the center is just set.
- Cinnamon Whip Cream
1 cup of heavy cream
1-2 tbsp powdered sugar
1/2 tsp vanilla extract
ground cinnamon
Combine cream and powdered sugar and whip, slowly add vanilla and continue to whip to desired consistency. Lightly sprinkle cinnamon and fold into cream. Add an additional light dusting of cinnamon to each cream dollop when serving.

I’ve had these little delites bookmarked for a while now… and i keep coming back and drooling over the pictures!
i finally went out and bought some ramekins to make it then realised i dont have kosha salt!
is it possiable to use either table salt or sea salt? if so how much would you put in instead?

Thanks for stopping by. So glad you are going to make these – they are so good. I would use just a pinch of sea salt. It is not a have to ingredient but it does round out the flavor of the chocolate a bit more. Let me know how it goes!

so easy and tastes fantastic! my husband and friend loved it! she is a diabetic and enjoyed it as it wasnt overloaded with extra sugar and wasnt too sweet!
mine wasnt as bubbly as yours and i used milk chocolate instead of dark but looked great and tasted even better! the cinnomon cream will become a regular with everything i do now… so good!
my husband has insisted i cook it again soon… and he wants it with cream AND icecreaam next time!
