The Princely Pomegranate

My friend brought over a pomegranate the other day and I completely fell in love with it. It’s not that I’ve never eaten a pomegranate before. I have. I will admit, I’ve stolen my share of a few seeds here and there, and I have definitely had a few swigs of the richly colored stuff in the voluptuous bottle from the grocery store, on occasion.  I’ve simply never been motivated enough to tear into one myself, if you can believe it. The thought of cracking open a whole pomegranate and digging out the seeds always seemed like far too much work for few piddly seeds. That is, until now. 

The opulent ruby red jewels, so deep and vibrant in color, popped, against the black plate I collected them on. I was immediately inspired to make a quick edible snack. Craving something on the healthy and somewhat simple side, to combat my frequent sugar indulgences, I scoured my kitchen in search of a few additional ingredients for my antioxidant potion. With a little help from the refrigerator and a few bits of this and that, I threw together a healthy, simple and delicious breakfast treat.

 

Pomegranate Blueberry Smoothie

seeds of 1-2 pomegranates

1 banana

1/3 cup of blueberries

1/4 cup of granola

1 cup of plain yogurt

¼ cup of soy milk or other juice

3-4 ice cubes 

Blend all ingredients with the exception of the soy milk or other liquid. Add liquid as needed to make as thick or thin as you like.

I used to think the same thing about the pomegranate! But I’ll admit that I do think they are a lot of work incomparison to an apple or banana…although they are gloriously lovely.

I love pomegranate and we have a tree in our garden. Its a pity there are no blueberries in Greece!
