A Simple Weekend: Buckwheat Apple-Cardamom Pancakes

I finally have a moment.

It was such a crazy month for me.

And, it was so nice to take a peek into my inbox and see the sweet well-wishes that many of you sent. I missed my regular dose of your colorful blogs and delicious recipes. These comments and notes most definitely made this transition and move a whole lot nicer. So, thank you very much.

This was the first real, mellow, “back to normal life” weekend. For the most part, that is. A weekend that wasn’t totally occupied by emptying boxes, running here and there, cleaning and purging and scouring away. There was only a little of that this weekend. It’s becoming less and less of that, which makes me very happy. Although, it’s definitely a different scene, I can feel myself slowly starting to settle in a bit. The foggy and crisp early morning walks of San Francisco are packed away for now. It’s a nice change to wake up to warmth and sunshine almost every day.

These pancakes are so good. They’re light and fluffy because I only used an egg white. They’re also on the healthier side with the oats, buckwheat flour and only a tablespoon of honey as the sweetener. Of course, you could use regular white all purpose flour and a bit of sugar instead of the honey if you want a sweeter pancake. It’s up to you. But, keep in mind that the grated apple also adds sweetness as well.

With next to no prep work, a little maple syrup and some fresh berries you’ll have yourself a light, delicious and leisurely weekend morning treat. Instead of the maple syrup try a dollop of plain yogurt and fresh fruit, my other favorite topping for these tempting little things. Either way, these pancakes are perfect for a mellow, relaxing and simple weekend.

Apple-Cardamom Pancakes

Ingredients:

3/4 cup of buckwheat flour

3/4 cup of quick oats

1/1/4 tsp of baking powder

3/4 tsp of baking soda

1/4 tsp ground cardamom

1/2 tsp ground cinnamon

about 1/2 tsp kosher salt

1 egg white

1 1/2 cups soy or rice milk

2 tablespoons oil

1 tablespoon honey

1 grated apple (I used fuji, they’re naturally pretty sweet)

Combine with a whisk the flour, oats, baking soda and powder, salt and spices into a large mixing bowl. Add the remaining ingredients to the top of flour mix- milk, egg white, honey, oil and grated apple. Whisk until just incorporated.

Heat a griddle on low to medium heat. Pour about 1/4 cup or so of batter on griddle. Let cook until bubbly on top and golden brown on the underside. Flip and repeat. Makes about 6-8 small to medium sized pancakes.

Incredible, delectable, delicious. We added apricots from our tree, making this my new go-to pancake recipe.

Great recipe. I like the use of oats with the buckwheat flour. I chopped my apples rather than grated them, and I had a bit of pumpkin puree in the fridge so I subbed that in for a bit of the milk (I used almond milk) and they were great. Merci!

You hit all the hight points for me. I have a special affinity for cardamon, and how can you go wrong with buckwheat? and pancakes. Wow, what a comeback I say. Hope the move went well.
