The same old blueberry and banana topped oatmeal can become pretty boring if you don’t mix it up once in awhile. I have a bowl of oatmeal for breakfast, sometimes several times a week, so I like to add a little variation to spice things up a bit. This is a quick sautee of apples, cinnamon, and a few other autumn pie spices that combine to make a lightly sweetened topping that you can mix into your oatmeal. You can also add toasted chopped nuts of your choice or dried fruit for a slightly different flavor. I usually make about 2-3 servings and just keep it in a jar in the fridge to reheat during the week. It’s also a great alternative to syrup for pancakes and waffles, and is so delicious with a scoop of rich vanilla bean ice cream.

Apple Pie Oatmeal Topping

2 medium apples

2 tsp lemon juice

2 tsp brown sugar

2 tbsp unsalted butter

1/4 tsp cinnamon

1/4 allspice

fresh grated nutmeg

Cut apples into bite size pieces and place into a bowl filled with lemon juice. Toss to combine. Melt butter on medium in a pan and sautee apples until you reach your desired texture. I like my apples to retain a very slight crisp texture which took about 3-4 minutes on medium to medium high heat. Add the brown sugar, cinnamon, allspice and nutmeg and continue to toss until the apples are fully coated.

  6. My one twin loves oatmeal and eats it for breakfast (or a snack) two or three times a week, too. He also loves apples. I’m going to make him some to spruce up his oatmeal. Thanks for sharing!

  11. I love this dish! I make them sometimes the same way & lay the apple pieces on my buttered bread in the morning. We,Belgians, love baked apple pieces on our bread slices ,…MMMMMMMMMM! We add the spices & cinnamon on the baked apple slices in the pan!

    Because of the lemon the apples don’t brown. I usually use them up in about two days though…
